So... let's just say you're like me, and are new to the whole vegan experience. You have (barely) survived Christmas, (painfully) rejected the Valentine's Day milk chocolates and have started to believe that's as bad as veganism gets. Then... BAM! You're hit with Easter!
What to do? What to buy? What to bloody eat?!
Have no fear. I, the Peroxide Pixie, a new and dedicated vegan, have researched some vegan easter eggs recipes to make your heart sing. Here's how to make your own vegan Easter eggs, have Easter egg hunts, make Easter treats and - if you're too lazy - where to buy vegan Easter eggs.
Vegan easter eggs recipes
This is a lovely vegan chocolate easter eggs recipe I experimented with the other day. Very quick and easy.
Vegan chocolate easter eggs recipe
- 1 8-oz. package non dairy cream cheese, softened at room temperature
- 3 cups powdered sugar
- 12 oz. vegan chocolate(whatever type you like, melted
- 1 1/2 tsp. vanilla extract
- Decorations - chopped nuts, unsweetened cocoa, toasted flaked coconut, hundred & thousands (or choose your own decorations)
Beat the non dairy cream cheese in a mixing bowl until it is smooth. Gradually add the powdered sugar, beating until it is well mixed. Add the melted chocolate and vanilla extract and mix well. Put in the fridge for about 1 hour. Shape the mixture into 1-inch balls or egg shapes and roll them in the decoration you have chosen. Store the finished chocolates in the refrigerator.
Makes about 5 dozen chocolates.

- 3/4 c. peanut butter
- 3/4 c. powdered sugar
- 1/2 c. cheerios-type cereal
- 1/2 lb. chocolate to coat (I used 70-some-odd-percent dark chocolate but hell, you use whatever you want.)
Put the cereal in a bag and go over it several times with a rolling pin to crush it. It doesn't need to be powder - some bigger chunks are fine. In an electric mixer with the paddle attachment, mix the peanut butter, powdered sugar, and crushed cereal until combined and pulling away from the sides of the bowl. (I imagine this could also be done in a food-processor, starting with the cereal crushing and adding the other ingredients. Also, of course, you can do this all by hand, but it's a stiff batter and would give my twig-like arms more of a work out than they signed up for.)
Scoop the peanut butter into teaspoon size (or really any size you want) balls and then roll between your palms to make little eggs. Chill the eggs while you melt the chocolate.
Chop up your chocolate and put it into a metal bowl that fits snugly over a pan. Heat some water in the pan, just enough to come beneath the bowl without touching it - the rising steam will heat the bowl and melt the chocolate. Place the bowl of chocolate over the hot water and stir time to time until your chocolate is smooth. Remove the pan and bowl to the counter, and dip your peanut butter eggs. I use chop sticks. You can also use a fork. Dip one egg, gently shake off as much chocolate as you can, place on parchment paper to cool. Repeat. Once all the eggs are dipped, place in the freezer to set up.
